Par-lor's Favourite Wine


Domaine Moltes Gewurztraminer Reserve
        1st white wine that impressed me. That happens to be at my friends’ house party to    
        pair with cheese fondue. The sweet level is brilliant and bouquet is creamy. It pairs   
        well with melting cheese, gives you a refreshing spark. It’s not those port-like 
        complexity; a simple straight forward wine which its structure still remains after 
        hours. With price less than $200, it is my all-time favourite. 

        -       Vineyard: Domaine Moltes, Alsace. Small 13 hecture vineyard planted near  
             Pfaffenheim.
        -       Grape: Gewurztraminer
        -       Colour: Lime, clear Nose: Strong lychee, plum, slight lily flower, slight mineral         
             Palate: Spicier than nose, lychee sustains, round finishing, hint of exotic fruit  
             like pineapple, jackfruit. Medium aftertaste. Drink within 2-4 years
        -       Food Pairing: Cheese, turkey, Mild Chinese dishes.

Jean Paul & Benoit Droin Chablis Grand Cru Les Clos
      Les Clos is one of the seven grand cru in Chablis, the highest rank of cru. It  
      consists of 5 parcels. Looking at 100 years history, you can see the heart of the
      vineyard oweners to push the business into a better era through gradual
      technology improvement. (Pneumatic press, cellar, barrels, investment).
      Under Droin, there are many lines, while this one gives the most balanced 
      acidity and complexity. A must-buy chardonnay.

-       Vineyard: Jean Paul & Benoit Droin (5 parcels out of 25ha) - Chablis, Burgundy
-       Grape: Chardonnay (also known as Beaunois)
-       Colour: Golden yellow, deep yellow; Nose: Vanilla, Nectarine, Mineral; Palate: Mineral, vanilla, pear and nectarine; very complex and balanced. Structured acidity. Medium body, very long after length; Drink after 5 years, 10 years would be the peak time
-       Food Pairing: Seafood, Caesar Salad, Chinese dishes (Canton / Shanghai style)
